Hoppers
In Sri Lanka, hoppers are thin, bowl-shaped pancakes named for the pan that gives them their form. Of course, these crispy basins cry out for some kind of filling. Just as the batter is starting to cook, chefs break a whole egg over it and cover the pan

The Sri Lankan Hopper is a type of bowl shaped pancake made with a simple yet age-old recipe of fermented rice flour and coconut milk. Also known as Appam in a few more cultures, hoppers have been a staple in Sri Lankan houses and some Asian countries for centuries. The Lakpura Aluminium Hopper Pan with a lid comes with an easy grip handle and a spatula which enables you to pour the rice mixture in easily and remove the crispy pancake out like a pro. The hopper mixture drips to the centre and makes it thicker at the bottom and crispy around the edges. Hoppers are enjoyed with spicy curries, onion and dried fish sambols, and even as egg hoppers which is a favourite among locals.
